Il ristorante Vespasia, premiato con 1 stella Michelin, si trova nel Relais & Châteaux Palazzo Seneca, un palazzo nobile del 1500 nel cuore del centro storico di Norcia, a pochi passi dalla piazza principale di San Benedetto. Vincenzo e Federico Bianconi, gli attuali proprietari e gestori, rappresentano l’ultima generazione di una famiglia che si occupa di ospitalità e ristorazione in Italia fin dal 1850: hanno condiviso con lo chef stellato Valentino Palmisano la loro idea di ristorazione, che tende a valorizzare il territorio Umbro e le sue immense ricchezze gastronomiche, senza dimenticare l’innovazione e la sostenibilità ambientale e sociale.
La cucina di Palmisano e della sua talentuosa brigata mira a restituire armonia ed equilibrio di sapori, accompagnando i commensali in un viaggio nel gusto e nel territorio Umbro. Lo chef utilizza solo materie prime di altissima qualità, che esalta attraverso accostamenti innovativi ma che rivelano leggerezza e rispetto del prodotto, per regalare sapori appaganti ed equilibrati. Per questo lo chef ha esplorato il territorio, incontrato personalmente i produttori locali e toccato con mano gli ingredienti che entreranno in cucina, dallo zafferano umbro alla pasta realizzata con un monograno dei Monti Sibillini coltivato a 600 metri d'altitudine.
In sala, Laura Santoro accoglie gli ospiti con cordialità ed eleganza, e trasmette la passione per la sua cantina, una riserva di vini italiani e internazionali, frutto di un’attenta ricerca. The Vespasia restaurant, awarded with 1 Michelin star, is located in the Relais & Châteaux Palazzo Seneca, a noble palace of 1500 in the heart of the historic center of Norcia, a few steps from the main square of San Benedetto. Vincenzo and Federico Bianconi, the current owners and managers, represent the last generation of a family that deals with hospitality and catering in Italy since 1850: they shared with the starred chef Valentino Palmisano their idea of catering, which tends to enhance the Umbrian territory and its immense gastronomic riches, without forgetting innovation and environmental and social sustainability.

For this reason the chef has explored the territory, personally met the local producers and chosen the ingredients that will enter into the kitchen, from Umbrian saffron to pasta made with a monograno of the Sibillini Mountains cultivated at 600 meters above sea level.
