Il Ristorante La Preséf – premiato dal 2013 con la stella Michelin, si trova nel cuore dell’agriturismo La Fiorida in bassa Valtellina e rappresenta il fiore all’occhiello della fattoria, lo spazio in cui gli chef Gianni Tarabini e Franco Aliberti raccontano in chiave innovativa e creativa gli eccezionali prodotti dell’azienda agricola.
Gianni è valtellinese, con una cucina profondamente radicata nel territorio, Franco è campano, nato come pasticcere, con esperienze nelle più rinomate cucine internazionali. Insieme hanno elaborato un menù creativo in cui confluiscono le reciproche contaminazioni, suggellate al meglio dai prodotti a km zero della fattoria.
La materia prima è sempre ineccepibile: erbe e verdure vengono raccolte in giornata dall’orto, dal caseificio provengono latticini e formaggi stagionati in oltre 20 varietà, la stalla provvede al rifornimento quotidiano di carne per il ristorante. Per valorizzare la freschezza e la qualità delle materie prime, si pone grande attenzione a come si lavorano, senza scartare abbinamenti che potrebbero sembrare azzardati ma che in realtà nascondono i giusti equilibri e attenzione al gusto.
I due chef credono che il risultato eccellente del loro lavoro derivi anche dallo stretto rapporto con le persone che compongono la loro brigata di cucina, perché questo è il luogo dove si confrontano idee, si sperimentano intuizioni e nuove strade, per creare armonie di sapore, di consistenze e di profumi, senza snaturare l’identità di ogni singolo ingrediente.
La carta dei vini propone una ricca selezione di etichette, con particolare riguardo ai vini della Valtellina, così da offrire pieno e perfetto compimento ai sapori che il ristorante evoca al palato.

The La Preséf Restaurant - awarded in 2013 by the Michelin star, is located in the heart of the La Fiorida farm house in the lower Valtellina and is the pride of the farm, the space where the chefs Gianni Tarabini and Franco Aliberti transform into innovative and creative dishes the exceptional products of the farm.
