Il ristorante El Molin si trova in un antico mulino del ‘600 al centro di Cavalese, in Val di Fiemme. Pochi tavoli in un ambiente raccolto e suggestivo, luci soffuse e un’atmosfera molto intima accolgono i piatti gourmet dello chef Alessandro Gilmozzi, consolidata Stella Michelin fin dal 2008.
Lo chef Alessandro, che conosce bene i boschi di questa meravigliosa valle dolomitica, ha deciso di portarne i profumi ed i sapori all’interno della sua cucina di montagna. Pesce e carne vengono sapientemente abbinati a erbe, bacche, licheni, radici, gemme di pino, cortecce, fiori e frutti di stagione: lo chef utilizza solo materie prime di altissima qualità, compreso ciò che di edibile offre il bosco, dando vita a piatti dai sapori equilibrati, tutti da godere. Dietro ogni suo piatto c’è una ricerca minuziosa, quasi scientifica, oltre a tanta tecnica e creatività, grazie alle quali lo chef è in grado di innovare i piatti della tradizione secolare trentina inserendo materie prime inusuali o perfezionando le antiche ricette.
Direttamente affacciata sulla sala del ristorante, la cantina conta una selezione di circa 800 etichette. Vini eccellenti che mettono in risalto il territorio trentino, senza dimenticare il resto d'Italia e del mondo.

El Molin restaurant is located in an old mill of the seventeenth century in the center of Cavalese, in Val di Fiemme. Few tables in a cozy and evocative setting, soft lighting and a very intimate atmosphere welcome the gourmet dishes of the chef Alessandro Gilmozzi, a well-established Michelin star since 2008.
Chef Alessandro, who knows very well the woods of this wonderful valley of the Dolomites, has decided to bring the aromas and flavors of the forest inside his mountain cuisine. Fish and meat are skillfully combined with herbs, berries, lichens, roots, pine buds, bark, flowers and seasonal fruits: the chef uses only the highest quality raw materials, including what edible offers the forest, giving life to dishes with balanced flavors, all to enjoy. Behind every dish there is a meticulous research, almost scientific, as well as a lot of technique and creativity, thanks to which the chef is able to innovate the traditional dishes by inserting unusual raw materials or perfecting the old recipes.
