Prende il nome da un prodotto della terra, le pere Madernassa che crescono rigogliose nei frutteti che circondano il ristorante e le due dimore storiche che ospitano camere di charme.
Il RISTORANTE LA MADERNASSA guidato dallo chef Michelangelo Mammoliti - 1 stella Michelin - nasce da una filosofia condivisa: ricerca continua dell’eccellenza, rigore e passione in ogni gesto, ma anche volontà di mettersi in gioco, di scambiare idee per continuare a crescere. Nessuna concessione sulla materia prima, che dev'essere ineccepibile: lo chef affianca i migliori prodotti del territorio ad altri semplici, a volte inusuali, come radici, fiori, germogli o erbe selvatiche, alla ricerca di quei contrasti che grazie al suo estro restituiscono sempre un gusto equilibrato, ricercato e creativo.
La carta dei vini è il frutto di una sapiente ricerca, per essere all'altezza dei piatti serviti: le etichette arrivano da tutto il mondo, da agricolture eco-compatibili, biologiche, biodinamiche, ma soprattutto ci sono i vini selezionati tra i piccoli produttori del territorio. Gli ambienti del ristorante sono essenziali ma accoglienti, con un’ampia vetrata a vista sulla cucina, tre sale da pranzo moderne e altrettanti terrazzi con imperdibili vedute su Alba, le colline di Barolo e Barbaresco e il Monviso che domina l’arco alpino.
Le due dimore CASA LORA e CASA ROERO, indipendenti tra loro e poco distanti dal ristorante, accolgono gli ospiti in camere eleganti, arredate con elementi antichi e moderni in sintonia con l’ambiente che le circonda. Una suggestiva piscina con fondo in pietra di Luserna e solarium in legno è inserita nel parco che circonda il ristorante.

We are in the heart of the Langhe and Roero, lands that Unesco protects as a World Heritage Site, among hills, ancient villages, vineyards and gastronomic traditions of absolute excellence. Here lies La Madernassa, an elegant resort located in the municipality of Guarene, just outside Alba, Barolo and Barbaresco. It takes its name from a product of the land, the Madernassa pears that grow luxuriant in the orchards surrounding the restaurant and the two historic houses that house charming rooms.
RESTAURANT LA MADERNASSA led by chef Michelangelo Mammoliti - 1 Michelin star - stems from a shared philosophy: continuous pursuit of excellence, rigor and passion in every gesture, but also willingness to get involved, to exchange ideas to continue growing. No concession on the raw material, which must be exceptional: the chef combines the best products of the area with other simple, sometimes unusual, such as roots, flowers, buds or wild herbs, looking for those contrasts that thanks to his talent always return a balanced, refined and creative taste.
The wine list is the result of a skillful research, to exalt to the dishes served: the labels come from all over the world, from eco-compatible, organic, biodynamic farming, but above all there are wines selected from small producers of the territory.
